Gin is a conundrum wrapped in an enigma. While juniper is a requisite part of any gin recipe, a host of other botanicals support juniper’s pine-y-ness, rounding it, sweetening it, shaping and mellowing it. In this class we will explore the roles played by coriander, angelica root, and licorice root. In collaboration with Eastbank Spirits, we’ll taste through custom distillates of these secondary gin botanicals, then try them in a negroni, a gin & tonic, and a gimlet. If gin is your muse, you won't want to miss this!
About the Instructor:
Dr. Peterson's background spans physics, engineering, perfumery, and bar ownership. His new book, Cocktail Theory - A Sensory Approach to Transcendent Drinks, is a detailed look at the theory and philosophy behind the Detroit cocktail bar he co-founded, Castalia, that operates as a perfumery by day, but by night transforms to serve scent-paired drinks.
